This Baked Apricot Chicken is a great way to spice up your chicken dinner – literally. It turns plain old chicken legs and thighs into a spicy-sweet delicacy, coated with a glaze of apricot preserves.
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl combine the jam, dressing and soup mix. Mix together.
Place chicken pieces in a 9×13 inch baking dish. Pour apricot mixture over chicken and bake uncovered in the preheated oven for 50 to 60 minutes.
